This is The Best Example of the French-Bladed Shallot knife I have created to date. There have, and only will be, three of these ever to be created in this particular steel thickness and steel choice. Starting with .156” thick AEB-L stainless steel, this knife has fantastic feel and functional characteristics.

Seen here in some exceedingly rare and quite beautiful Vintage Westinghouse Linen Micarta. With crisp and flowing detail-carving that aids in grip, this French Shallot, is a thing of Functional-Beauty. The handle is set with five stainless steel pins, the two fore and aft being peened. The handle is of generous size and is very comfortable in the handle-hold while designed to excel in the pinch-grip.

The Overall Length of this knife is 13” and the blade exhibits 7 &7/8” of cutting edge. Blade Steel is AEB-L Stainless Steel at a Rockwell hardness of 59-60 for excellent toughness, keen edge holding and servicing/sharpening. The blade has a fine satin finished bevels with the entire perimeter of the blade being mirror polished, also, featuring rounded spine and choil = that area just before the hand.

One of the most dramatic features of this French Shallot Knife is the extreme distal taper that results from starting with .156” thick blade stock. In it’s final state, just before the handle the blade thickness is .124” down to .021” near the tip. The blade as stated features a fine convex blade geometry for strength and keenness. This is the geometry that you will see on just about every vintage knife created for the past 200-plus years…..so there is a reason for this…because it works really well.
