In all seriousness tough. The Vast Majority of the original Alsace Knives from France were generally smaller knives. They were “The Peoples knives” every kitchen had one, and generally, they had a profile akin to a small butcher knife. There were some created with pointy blades reminiscent of a French Knife pattern, but honestly not that many. This is one reason why I do create these from time to time and the reality-is, that, it’s a knife that can be used for so many tasks in just about any kitchen be it Home or Professional.

This knife would excel as a line-knife in a professional kitchen for doing detailed service cuts, and equally find a sweet place in a home kitchen as a knife for creating daily meals. Alternatively it could be used for charcuterie service and the list could go on, just use your imagination!

Here, created in 52100 carbon tool steel with an etched patina and polished spine, this beauty is dressed in some exceedingly rare International Paper Company Bleached Linen Micarta, with modern translucent G-10 inlay and single, structural, peened pin that pierces the tang fixing the blade in the handle; a very strong build meant to last generations.

Overall Length is just over 10” with a cutting edge of 5”, blade width is 1 & 5/16” The handle is my Modern Interpretation of the Alsace Style Knives and is created as stated above, in Bleached Linen Micarta and will age to a dark caramel color in time similar to what you see at the end of the handle. It’s the beauty and reality of Vintage Micarta, it will change, but the change is sublime and with a life of it’s own.
