This Carter French is a knife you will quickly become accustomed-to in a very short time. Inspired by a knife I have had in my kitchen for over 20-years (Please see This BLOG Post about it) it’s sure to become your “Go-To” knife for daily meals be they small snacks or more elaborate preparations, where a smaller knife with a wide enough heel to do detail cuts is appreciated and needed.

Built here in some exceedingly beautiful Arizona Desert ironwood with vintage G-7 Micarta Bolster-Laminate for added beauty and strength and single structural-pin, it is a thing of function and art all in one very useful and capable creation.

The blade is 5 & 5/8” to the front of the handle and exhibits 5 & 3/8” of cutting edge and differential heat treatment

A very comfortable knife to use in a great size. The blade exhibits a nice distal-taper and convex blade geometry for keenness and strength. My steel choice here is 26C3. I chose this as it is a very clean steel with great physical properties of edge holding and toughness. At a higher Rockwell, running around 62-64, it is certainly harder than I generally create, but in this steel the toughness matches this in a nice balance of serviceability and keenness and strength. With proper use and care, it will stand the test of time; with the only caveat being, that you just have to wipe it dry when done using it, and also know that if left wet it WILL RUST if left wet……however, In time the blade will develop a beautiful patina that will in turn protect the fine carbon steel blade.

This all said, it’s a classic smaller knife, in a time-honored profile that has been employed in small and larger knives alike for centuries. So nothing real groundbreaking here, but simple knife that will last generations.
