This is a variation on the Kirituke Chef. Created here with a bit more belly and with ergonomics to suit those who are no taller than 5’8” The handle alignment to the blade will be perfect for people ( not only ladies;) of that size.

I wanted to create a knife for the smaller chef/cook and although the handle being a little smaller in diameter than I normally do.

Overall…a very comfortable knife with a nice amount of knuckle clearance for those with smaller to medium size hands.

The blade is created out of 52100 carbon steel using the stock reduction method. Blade has a nice satin hand sanded finish. The Rockwell Hardness is 59-60, making it a very easy knife to both hone and resharpen, that will also have a long lasting edge and get razor sharp!

The blade has a very keen convex geometry with a wonderful distal taper with strong and nimble tip for fine detail work. The blade also features rounded & polished spine, choil (area just before your fingers) and nice satin finish.

This is one of those knives that would serve very well as a daily food prep knife and as a main knife for those who have smaller hands.

OAL on this knife is 12 & 1/8”

The blade exhibits 6.5” of cutting-edge and is 6 & 5/8” to the front of the handle.

Blade width is just shy of 1.75”

The handle is Bacote with antique ivory Micarta inlay ad a single mosaic pin.

As with all California Custom Knives , each knife comes with it's own custom trademark Slip Sheath and makers certificate and care instructions.
