After many requests for some knives in stainless steel I have created a few that are sure to please.

This 7.25” Kiritsuke created here in a handle build, mortised construction of Antique Ivory Norplex paper Micarta and some very fine Bloodwood. A classic look in a very comfortable handle.

Even though I am known for my forged carbon steel blades, I have had many requests for some kitchen knives in stainless steel. So if you enjoy the higher wear resistance and ease of care of stainless steel over carbon steel, then this is a fantastic opportunity to get these attributes in this fantastic new design.

Blade cutting edges measure 7.25” RC 62-63

This is one of those knives that you could do just about everything you would need to do in any kitchen. Not a big knife but not a small one either. You can do all your meal prep be it veggies of meats, with blades robust enough to split hard squash if you so choose.

The blades are convex geometry with a wonderful distal taper and are robust, with keen edges and nimble tips. They feature rounded & polished spine, choil (area just before your fingers) and nice satin finish.

As with all California Custom Knives , each knife comes with it's own custom trademark Slip Sheath and makers certificate and care instructions.
